Chicken and Broccoli Stir Fry is a healthy dish filled with fresh crisp vegetables, juicy chicken coated in a soy sauce mixture. You can easily have dinner on the table in under an hour with this yummy dish.

This stir fry is best served with fluffy white rice but is also great served with brown rice or even quinoa. Finish off this tasty dinner with a sweet dessert of Blueberry Lemon Cookies or Peanut Butter Banana Bars.

  • chicken breast
  • flour
  • chicken broth
  • soy sauce
  • olive oil
  • broccoli
  • onion
  • red pepper
  • mushrooms

How to Make Chicken and Broccoli Stir Fry

Toss cubed chicken breast with flour until evenly coated. Heat a skillet on medium-high heat, add 1 tablespoon of oil. Brown the chicken for about 8-10 minutes, then remove and set aside.

In a small bowl with remaining flour, mix chicken broth and soy sauce well, set aside. In the same skillet, add rest of the oil, broccoli, onion, red pepper and mushrooms. Stir until softened, about 10 minutes.

Pour soy sauce mixture on vegetables and bring to a boil, stirring constantly. Toss in chicken, mix well and cook until sauce begins to thicken, about 10 minutes. Serve over rice.

Notes & Tips

Substitutions for Chicken and Broccoli Stir Fry:

  • Chicken Breast: you can use any kind of cubbed boneless chicken for this recipe.
  • Vegetables: you can add any other vegetables you wish or exclude any that you are not fond of. You can also use frozen vegetables just be sure not to overcook them.
  • Serve with: serve this stir fry over white rice, brown rice, or quinoa.

How to Store Chicken and Broccoli Stir Fry

Refrigerator: Store the chicken in an airtight container for 3-4 days in the refrigerator. When ready to eat, heat in a skillet on the stove with some olive oil.

Freezer: You can freeze in a freezer bag for up to six months. Allow to thaw in the refrigerator for a day before reheating. Then heat in a skillet on the stove with some olive oil.

  • ¼ cup soy sauce

  • 2 tablespoon olive oil, divided

  • 1 pound broccoli

  • ¼ cup onion, chopped

  • ½ cup red pepper, chipped

  • 1 cup mushrooms, sliced

Directions
