Chocolate Chip Zucchini Bread

This fluffy, delicious Chocolate Chip Zucchini Bread is as easy to make as it is tasty! It is perfect as a healthy after dinner treat, or a special way to start your day for breakfast. Chocolate Chip Zucchini Bread is a great treat for anytime, and it is so easy to make a few loafs to freeze for later.

This Chocolate Chip Zucchini Bread is super simple to make, just make sure that you shred the zucchini. Shredding it ensures that it bakes into the bread nicely. You can peel the zucchini too if you want, but I feel that it gets plenty soft when it gets baked. It holds up very well frozen too. Double the recipe and make an extra loaf for later! It is good frozen for up to 3 months.

There’s plenty of room to make this your own as well. Semi-sweet chocolate chips give it that classic chocolate flavor while being tastefully sweet. But you can add in so many different things to give it a different spin. Add in white chocolate chips, dark chocolate, butterscotch chips, or even chocolate chunks to mix up the texture.

Ingredients to Make Chocolate Chip Zucchini Bread:

  • flour
  • baking powder
  • baking soda
  • granulated sugar
  • eggs
  • vegetable oil
  • milk
  • vanilla extract
  • shredded zucchini
  • semi-sweet chocolate chips

How to Make Chocolate Chip Zucchini Bread:

  1. Preheat the oven to 350 degrees. Grease a 9×5 loaf pan with shortening or cooking spray then set aside.  
  2. In a large mixing bowl beat together eggs and sugar for 1-2 minutes. Add in vegetable oil, milk  and vanilla extract. 
  3. Slowly mix in flour, baking soda and baking powder until just combined. Fold in shredded zucchini and chocolate chips. 
  4. Pour batter into the greased loaf pan. Bake at 350 degrees for 60 minutes or until a knife comes out of the center clean. Remove from the oven and allow to cool.

Notes & Tips:

  • Store in an airtight container on the counter for up to three days. Freeze in a ziplock freezer bag for up to three months. 
  • Do I need to peel the zucchini? You can if you like but I do not because it softens enough while baking you can’t even tell. 
  • Variations: You can use dark chocolate, white chocolate or chocolate chunks if preferred. 
  • It’s important to shred the zucchini, not dice or chop it because it will not bake into the bread as nicely. 
  • This recipe makes one loaf but you can easily double it to freeze one for later!
