Ingredients to Make Citrus Marinated Chicken Tacos
- boneless chicken thighs
- red onion
- garlic
- jalapeno
- cilantro
- orange
- lemon
- lime
- salt
- pepper
- olive oil

How to Make Citrus Marinated Chicken Tacos
First, combine onion, garlic, jalapeno, cilantro, orange, lemon and lime juice and zest, salt, pepper and ¼ cup of olive oil in a medium bowl.

Place chicken in a resealable bag and pour over the marinade. Seal the bag and massage the chicken to ensure it is evenly covered with the marinade. Refrigerate for at least 2 hours or overnight.

When ready to cook, heat remaining 1 tablespoon of olive oil in a large heavy based skillet over medium-high heat. Remove chicken from marinade using a slotted spoon and add to the pan in a single layer. Cook the chicken stirring event 2-3 minutes until it starts to caramelize and is cooked through, about 10 minutes. Depending on the size of your skillet you may need to cook the chicken in batches.

Serve warm with tortillas and your favorite toppings!

Tips & Notes
Substitutions for Citrus Marinated Chicken Tacos
- Chicken Thighs: you can substitute the chicken thighs for chicken breasts or even chicken tenderloins depending on your preference.
- Red Onion: you can also use any kind of onion however the red onion brings a more sweet taste to the dish than other kinds.
- Jalapeno: if you or your family are not huge fans of spice, leave out the jalapeno.
- Toppings: top off these tacos with a sweet salsa recipe or some sour cream.
How to Store
Refrigerator: Store the chicken in an airtight container for 3-4 days in the refrigerator. When ready to eat, heat in a skillet on the stove with some olive oil.
Freezer: You can freeze the chicken in a freezer bag for up to six months. Allow to thaw in the refrigerator for a day before reheating. Then heat in a skillet on the stove with some olive oil.
