Coffee Cookies

Coffee Cookies are perfect for a sweet breakfast treat or an after-dinner indulgence. These bring together the bitterness of espresso and dark chocolate, and the familiar sweetness of cookies. There’s nothing bitter-sweet about these cookies though, they are a delectable treat that gets better with every bite!

These Coffee Cookies are incredible if you top them with coarse sea salt. It brings a complexity by adding saltiness to the already dynamic bitter-sweet contrast of the cookie. If you don’t have chocolate to chop you can use chocolate chips, but the irregular chunks of chocolate make sure that every bite has a different explosion of flavors.

Bring these Coffee Cookies to your next brunch. They fit an after-dinner coffee session perfectly. These naturally have a tiny bit of caffeine from the espresso powder so it’s probably not the best snack for the kids right before bed, but let’s be real, you weren’t going to share these with them, were you?

Ingredients to Make Coffee Cookies:

  • butter
  • sugar
  • brown sugar
  • vanilla extract
  • espresso powder
  • flour
  • baking soda
  • dark chocolate

How to Make Coffee Cookies:

  1. Preheat the oven to 350 degrees. Line a baking sheet with parchment paper and set aside.
  2. In a large mixing bowl, beat together the butter and sugars until light and fluffy. Beat in the egg and vanilla.
  3. Slowly mix in the espresso powder, flour, and baking powder until well combined. Fold in the chopped dark chocolate pieces.
  4. Use a large cookie scoop to make 1-2 inch balls of dough and place them evenly apart on the cookie sheet.
  5. Bake in the oven for 10 minutes then remove and transfer to a wire rack to cool.
