How to Make French Crepes:

In a medium mixing bowl, beat eggs and milk together until well combined. Sift in the flour and sugar then mix until smooth.

Heat a medium sized skillet over medium heat and lightly grease with butter or cooking spray. Pour ¼ cup of batter into the middle of the pan and spread in a thin circle. Allow to cook for 30 seconds then carefully flip and cook another 30 seconds. Remove from the pan and continue until all the batter is gone. Serve immediately while still warm.

Notes & Tips

How to Store French Crepes

Store in the fridge for up to five days, reheat in the oven in a baking dish at 350 for ten minutes.

Freeze for up to three months in an airtight container, be sure to place parchment paper in between them so they do not stick together when thawing.

Expert Notes

  • Chill batter in the fridge for up to 12 hours to prep the night before.
  • You can use a specialty crepe pan but it’s not necessary.
  • Serve with whipped cream, fresh berries, chocolate or nutella drizzle.
  • You can also make these into savory crepes to serve with eggs, cheese or pesto, just leave out the tablespoon of sugar in the batter.

FAQs

Do I have to have a crepe spreader?

I made these with and without this crepe spreader and it was so much easier to get thin, perfect circles with it. If you like making crepes often I highly recommend purchasing one.
