Mexican Sloppy Joes are perfect for anyone (like me) who has trouble deciding day after day what to have for dinner. This is a great recipe that is simple and easy to make, but also something unique to inject into your normal dinner rotation. It’s great for leftovers too, all you need to do is get the pan out and reheat.

You can make Mexican Sloppy Joes as spicy or mild as you need to fit your family’s preferences as well. Want something cooler but want all the Mexican taste? Go with a mild salsa and skip the jalapenos. Want something that’ll have your local fire department on alert? Mix in some cayenne powder or a small drop of ghost pepper sauce. If you want a side that will provide a cool contrast and keep the Mexican theme, try serving with Elote Dip.
