Red White & Blue Cookie Cake

If you need a dessert for your next Memorial Day or 4th of July party, this Red White & Blue Cookie Cake will be perfect for you! With red, white, and blue sprinkles dotting the inside, and star shaped sprinkles on top, this cookie cake screams patriotism. It’s super easy to make too, and even the most amateur of cake decorators can make this Red White & Blue Cookie Cake look stunning.

Making this Red White & Blue Cookie Cake is a two step process. Once you have the cookie cake itself together and ready to bake, you can make the super simple, 3-tngredient frosting while you wait. If you really want to go all out with the patriotic colors, you can buy or make three separate smaller batches of frosting and alternate the colors when you frost around the outside of the cake.

For some added flavor, you can add chocolate chips or white chocolate chips in the cookie cake batter. The red, white & blue works great for American holidays but you can customize the colors for any occasion. You can even use red and white sprinkles in the cookie cake and top it with maple leaf sprinkles to celebrate Canada Day!

Ingredients to Make Red White & Blue Cookie Cake:

  • butter, softened
  • granulated sugar
  • egg
  • vanilla extract
  • flour
  • baking soda
  • salt
  • red white and blue sprinkles
    Frosting: 
  • butter
  • powdered sugar
  • milk

How to Make Red White & Blue Cookie Cake:

  1. Preheat the oven to 350 degrees. Grease a cookie cake pan and set aside. 
  2. Beat together the butter and granulated sugar. Add in egg and vanilla extract. 
  3. Slowly mix in flour, baking soda and salt until just combined. Fold in red white and blue sprinkles. 
  4. Press dough evenly into the bottom of the greased pan then bake for 20-25 minutes. 
  5. White the cookie cake cools, beat together the butter, powdered sugar and milk until smooth and creamy. Pipe the frosting around the edges of the cookie cake, garnish with additional sprinkles and serve.

Notes & Tips:

  • Store in an airtight container on the counter for up to 4 days, or freeze for up to 3 months.
  • Regular sprinkles work best for this recipe, nonpareils will bleed their colors into the cake and it won’t look as good. I used these sprinkles for the cake, and these sprinkles to garnish.
  • Add ins – throw in some white chocolate chips for extra flavor.
  • I used this cookie cake pan but you can also use a pizza pan or a 9×13 baking dish.
