Slow Cooker Stuffed Shells

These Slow Cooker Stuffed Shells are the ultimate comfort food! They are perfect for an easy weeknight dinner or for a laidback family weekend gathering. With just a few ingredients like shells, sauce, mozzarella cheese, and beef, it’s super easy to make. You can have this prepped in 10 minutes and let your slow cooker work its magic!

Slow Cooker Stuffed Shells have an almost creamy texture with the combination of marinara sauce and melty mozzarella cheese. With using a slow cooker, you’ll want to make sure there’s plenty of flavors for the shells to soak up which is why I like to use beef and onions as well as mixing in some diced tomatoes for more volume.

Depending on how many are at your dinner table, you may want to add some more beef or more noodles. You can also swap out your protein and use chicken or omit the meat altogether to make this vegetarian.

Remember, when you’re making these Slow Cooker Stuffed Shells that you aren’t adding the shells and cheese until after you’ve slow cooked the other ingredients. You’ll want to add the shells and cheese in and cook for an additional 30 minutes. Don’t worry about parboiling the shells either, add them in uncooked and they’ll be perfect by the time you are ready to serve this.

I like to top it with some cool mozzarella cheese when serving, it provides a nice temperature contrast, but you may top with grated parmesan cheese as well.

Ingredients to Make Slow Cooker Stuffed Shells:

  • ground beef
  • onion
  • marinara sauce
  • diced tomatoes
  • mozzarella cheese
  • small shell noodles

How to Make Slow Cooker Stuffed Shells:

  1. In a large skillet over medium high heat, brown the beef. Drain any excess liquid then transfer to the slow cooker.
  2. Add the diced onion, marinara sauce, and diced tomatoes. Cook on low for 5-6 hours or on high for 3 hours.
  3. Add the mozzarella cheese and noodles then cover and cook for an additional 30 minutes then serve.

  • 1 large onion diced
  • 1 jar (28 ounces) marinara sauce
  • 2 cans (15 ounces) diced tomatoes
  • 1 ½ cups mozzarella cheese, shredded
  • 1 box (12 ounces) shell noodles

Instructions

  • In a large skillet over medium high heat, brown the beef. Drain any excess liquid then transfer to the slow cooker.
  • Add the diced onion, marinara sauce, and diced tomatoes. Cook on low for 5-6 hours or on high for 3 hours.
  • Add the mozzarella cheese and noodles then cover and cook for an additional 30 minutes then serve.
